Christina Fusca Boova’s Marinated Tomatoes & Basil Salad

1/4-pound part skim mozzarella cheese sliced

1/3-cup olive oil

3 tbls. Red wine vinegar

3 tbls. Chopped parsley

3 tabs chopped onion

1 tbls. Finely chopped fresh basil

1/2-teaspoon salt

1/8-teaspoon pepper

Alternate tomatoes and cheese slices in shallow dish.  Overlay slices.  Mix dressing ingredients; pour over tomato and cheese slices.  Cover refrigerates several hours. 

Makes 4 servings     

 

 

Pat Fusia’s Artichoke Salad

1 can artichoke hearts- drained cut to bite size pieces

1 can hearts of palm- drained, cut to bit sized pieces

1 medium tomatoes- chopped

6 ripe olives – sliced

4 medium mushrooms – sliced

Combine all ingredients and add Hellmann’s Italian salad dressing or your own.
