Marinated Tomatoes & Basil Salad

part skim mozzarella cheese sliced
1/3-cup
olive oil

tbls. Red wine vinegar

tbls. Chopped parsley

tabs chopped onion

tbls. Finely chopped fresh basil
1/2-teaspoon
salt
1/8-teaspoon
pepper
Alternate tomatoes and cheese slices in shallow dish.Overlay slices.Mix dressing
ingredients; pour over tomato and cheese slices.Cover refrigerates several hours.

1 can artichoke hearts- drained cut to bite size pieces

can hearts of palm- drained, cut to bit sized pieces

medium tomatoes- chopped

ripe olives – sliced
4
medium mushrooms – sliced
Combine all ingredients and add Hellmann’s Italian salad dressing or your own.
